Fossa at The Ambrosian Pantry

Fossa is Singapore's first bean-to-bar chocolate maker, founded by Jay Chua, who left a career in finance to pursue his passion for chocolate. The name comes from the Latin "fossa" meaning a pit or trench, referencing both the fermentation pits used in cacao processing and the idea of digging deep into craft. Fossa sources cacao from estates across Southeast Asia, South America, and Africa, with a particular focus on Asian origins that mainstream Western chocolate makers overlook.

What sets Fossa apart is their deep knowledge of Asian flavor traditions. Their bars feature ingredients like wok-fried Sichuan mala spices, yuzu, pandan, and Yuasa soy sauce, creating chocolate that no Western maker would think to attempt. They have won over 50 international awards including multiple International Chocolate Awards and Academy of Chocolate honors. Their Salted Egg Cereal and Spicy Mala bars have become cult favorites worldwide.
