The name alone starts a conversation, but the flavor is what keeps people coming back. Ya Shi Xiang (literally "Duck Shit Fragrance") is a dancong tea cultivated in the Phoenix Mountain of Guangdong Province. Legend has it that the farmer gave his prized tea an unpleasant name to discourage competitors from stealing his plants, and the name stuck. The tea has notes of longan and malt with a long floral finish, and Fossa blends it into a milk chocolate that brings out every nuance.

This bar won a Silver Award at the International Chocolate Awards, and is a collaboration with rare tea curator Pekoe & Imp. It represents everything Fossa does best: taking a fascinating ingredient with a story and turning it into a chocolate that is as delicious as it is interesting. Made bean-to-bar in Singapore. Fossa is one of the makers we're proudest to carry.

Tasting notes: Floral fragrance layered with notes of longan and malt.
Pairs with: An oolong tea, a light Japanese whisky, or enjoyed completely on its own.
Perfect for: Tea enthusiasts, collectors of unusual flavors, and anyone who appreciates a good story with their chocolate. You'll find this at The Ambrosian Pantry, 263 Josephine St in Cherry Creek, Denver, a destination for food lovers who care about quality and provenance. Shop online at theambrosianpantry.com.
