The recipe has not changed since 1905. Chopped PGI Piedmont Hazelnuts are bound with caramelized sugar and covered in 60% pure dark chocolate, creating a confection that is crunchy, sweet, bitter, and nutty all at once. The Italian novelist Emilio Salgari reportedly loved to savor Nougatine while recounting his adventurous tales at literary gatherings in Turin.

Nougatine was Silviano Venchi's original confectionery creation, the candy that built the company and earned Venchi the title of "most elegant chocolate shop in Piedmont."
