A limited release collaboration with artisanal sake curator KuroKura, this bar uses sake kasu (the lees left after sake brewing) from two prestigious Japanese craft breweries. The white kasu comes from Akishika Shuzo, a brewery that grows its own organic rice in-house. The red kasu comes from Mukai Shuzo's one-of-a-kind Inemankai sake, made with a rare strain of red rice from the master brewer's hometown of Ine in rural Kyoto. Both are blended with nano-lot cacao from Kelantan, Malaysia.
The result is a 73% dark chocolate with fruity, nutty, and umami qualities that echo the complexity of elegantly aged sake. Dairy-free, soy-free, nut-free, gluten-free, and vegan.
