Rustichella d'Abruzzo at The Ambrosian Pantry

Rustichella d'Abruzzo has been crafting artisan pasta since 1924, when Gaetano Sergiacomo began making pasta with flour from his family's stone mill in the town of Penne, Abruzzo. In 1981, his daughter Nicolina Peduzzi revived the pastificio, and today the fourth generation of the Peduzzi family continues the tradition. They were the first artisan pasta brand introduced to America, through Dean & DeLuca in New York City in the late 1980s.

Rustichella uses the finest durum wheat semolina, pure Apennine mountain spring water, bronze dies for a rough sauce-gripping texture, and slow air-drying at low temperatures for up to 56 hours. Industrial pasta dries in hours at high temperatures; Rustichella's patient process preserves the wheat's flavor, aroma, and nutritional qualities. The difference is immediately obvious when you cook it. They celebrated their 100th anniversary in 2024 and offer one of Italy's most extensive artisan pasta lines.
