Made as a spiral or helix, fusilli is one of the most popular pasta cuts of Neapolitan lineage. Longer and denser, this fusillo (spindle) is an entwined cross that will capture sauce between its ridges. Cooking time: 9-11 minutes. A classic cut that can be served with any type of sauce. Because of its density, fusilli will retain a pleasurable bite when served in a cold salad with shellfish or tuna, or baked with eggplant and ricotta.

Rustichella d'Abruzzo celebrated their 100th anniversary in 2024, and a century later they still make pasta the same way: bronze-extruded, slow-dried, from the finest Italian durum wheat and Apennine spring water. The difference is immediately obvious when you cook it. The pasta has a rough, porous surface that grips sauce, a firm al dente bite, and a wheaty flavor that industrial pasta simply cannot replicate.
