Farfalloni, meaning big butterflies in Italian, are a bigger bow-tie than those commonly available, bearing soft ridges on the surface in order for the pasta sauce to adhere to it. Cooking time: 11-13 minutes. Childhood memories remind us of tomato and cream sauce dusted with abundant Parmigiano, as well as old fashion classics such as vodka sauce or salmon and cream sauce at Grandmother’s table. A children’s favorite, these bow-ties are also ideal for use in pasta salads.

Their slow-drying process (up to 56 hours at low temperatures) preserves the wheat's flavor and creates a texture that supermarket pasta cannot match.
