The most typical of Ligurian shapes, trofie are always served with pesto and green beans when in season. The name is derived from a Greek word meaning nourishment. Cooking time: 12-14 minutes. Traditionally served with pesto, little cubes of potatoes and string-beans cut the same length of the pasta. Wonderful served cold or in soups.

Since 1924, Rustichella d'Abruzzo has been making pasta the way it was meant to be made: with top-quality semolina, mountain spring water, bronze dies, and patience. Their slow-drying process (up to 56 hours at low temperatures) preserves the wheat's flavor and creates a texture that supermarket pasta cannot match. Now in their fourth generation, the Peduzzi family continues to honor the traditions of their grandfather Gaetano Sergiacomo.
