Edmond Fallot at The Ambrosian Pantry

Edmond Fallot is the last independent, family-owned mustard mill in Burgundy, France. The original mill was founded in 1840 in Beaune, near Dijon, France's historic center of mustard making. It was purchased by Edmond Fallot in 1928 and is now run by Marc Desarmenien, Edmond's grandson. They stone-grind their mustard seeds using traditional methods that preserve delicate flavors, a slow process that industrial producers abandoned long ago.

Their Burgundy Mustard (Moutarde de Bourgogne) is the only IGP-certified mustard in existence, made exclusively with Burgundian mustard seeds and AOC Burgundy wine. They produce over 40 flavored mustards (tarragon, basil, walnut, green pepper, and more), and their products are used by chefs at Paul Bocuse and Joel Robuchon restaurants. At the beginning of the 20th century, there were 33 master artisans producing mustard in Beaune. Edmond Fallot is the only one left.
