About Mercado Famous

Known for
Spanish cured meats

The family behind Mercado Famous describes itself simply: Spaniards, Chinese and food lovers. The founders' grandparents moved to Spain and opened restaurants, so the founders grew up around Spanish food, especially charcuterie. The founders moved to the United States nearly 20 years ago and built the company to bring those foods here.

The cured meats come direct from Spain, and the company says its partner farms have practiced their craft for generations. The range covers jamón, cured lomo (pork loin) and cured sausages. The family says its favorite way to enjoy the food is the Spanish way: sharing jamón and vermouth with friends.

Mercado Famous questions

What does Ibérico mean on Spanish cured meats?

Ibérico refers to the Iberian pig, a breed native to Spain. The most prized hams come from pure Ibérico pigs raised on the dehesa, open pastureland dotted with holm oaks and cork oaks, where they feed on acorns, and Spain reserves its black label for ham made this way. Mercado Famous uses the same breed for its Ibérico sausages.

What is the difference between chorizo and salchichón?

Both are Spanish pork sausages. Mercado Famous seasons its Chorizo Ibérico with pimentón (Spanish paprika), garlic and oregano, while salchichón, as Spain's official dictionary (the Real Academia Española) puts it, is a pressed, cured sausage of ham, pork fat and whole peppercorns that is eaten raw. Curing is a way of preserving meat so it keeps without cooking. Mercado Famous lists Ibérico versions of both, and also a Chorizo Serrano.
