About Graza

Known for
single varietal Picual olive oil from Jaén, Spain, in squeeze bottles

Graza says about 97 percent of its oil comes from Picual olives picked, pressed and bottled in Jaén, in Andalusia. The squeeze bottle takes its cue from professional kitchens.

Its extra virgin oils are sorted by when the olives are picked: very early in the season, when young green olives yield only a little oil, or at peak harvest, when more mature olives yield more oil with a milder flavor.

Graza questions

What is the difference between early harvest and late harvest olive oil?

Olives picked early, while young and green, give much less oil, but it tastes spicier and punchier; a peppery or bitter taste in olive oil comes from compounds called polyphenols. Riper olives picked at peak harvest give more oil with a milder flavor. Graza makes its early harvest oil, Drizzle, for finishing and says to keep it off the heat, and its peak harvest oil, Sizzle, for everyday cooking.

What is a Picual olive?

Picual is a Spanish olive variety and the main one grown in the province of Jaén, in Andalusia. The University of Jaén's olive glossary says it makes up about 20 percent of the world's olive plantations and half of Spain's. The fruit gives a high yield of oil, and the oil is known for keeping well and for its high level of polyphenols, the compounds behind a peppery or bitter taste. Graza says about 97 percent of its oil is made from Picual olives.
