Pronounced “GOO-ee-duck,” geoduck is a giant, wonderfully peculiar clam native to the cold waters of the Pacific Northwest. Wildfish Cannery’s version is hand-harvested by divers from wild beds near Prince of Wales Island in Southeast Alaska, then prepared and canned in the tiny coastal community of Klawock.

Most of Alaska’s geoduck harvest is shipped live overseas, leaving this remarkable local ingredient surprisingly difficult to find at home. Wildfish is helping change that by working directly with its neighboring diving fleet to create a domestic market for one of Alaska’s most curious treasures.

The freshly harvested clam is seasoned with salt, pure cane sugar, garlic, and white pepper before being smoked over natural alderwood. Each tin is then slow-pressure cooked in small batches, preserving geoduck’s characteristically firm, crisp bite while adding a golden color and deep savory flavor.

The result is mildly ocean-sweet, smoky, and intensely umami-rich, somewhere between a beautifully prepared clam and seafood bacon. It is unusual enough to satisfy the most adventurous tinned-fish enthusiast, yet approachable enough to convert the merely curious.

Enjoy it directly from the tin, slice it thinly over buttered rye, or serve it on a cracker. Chop it into fried rice, fold it into pasta, mix it with cream cheese for a deeply savory spread, or use it anywhere clams traditionally call the shots. It is especially good in chowder or perched dramatically atop a Bloody Mary or Bloody Caesar.
