Celebrate the unique flavors of the sea with Tonnarelli al Nero di Seppia (Tonnarelli with Squid Ink). To make this pasta, fresh black squid ink is mixed with the durum wheat semolina and water, turning it into a gorgeous, dark hue and infusing it with a light salinity that pairs perfectly with shellfish. Cooking time: 8-10 minutes. Best served with a spicy fish sauce. Also wonderful with simply olive oil, garlic and chopped parsley. For a decadent dish, top the pasta with some grated bottarga.
Since 1924, Rustichella d'Abruzzo has been making pasta the way it was meant to be made: with top-quality semolina, mountain spring water, bronze dies, and patience. Their slow-drying process (up to 56 hours at low temperatures) preserves the wheat's flavor and creates a texture that supermarket pasta cannot match. Now in their fourth generation, the Peduzzi family continues to honor the traditions of their grandfather Gaetano Sergiacomo.
Pairs with: Your favorite sauce, or simply with good olive oil, Parmigiano, and black pepper.
Perfect for: Home cooks who understand that great pasta starts with great ingredients. Available at The Ambrosian Pantry in Cherry Creek, Denver (263 Josephine St), where we bring together the world's finest gourmet foods under one roof. Order online at theambrosianpantry.com.
