This single origin 86% dark chocolate bar is made from ancient Chuncho cacao produced by the Puma family in Cusco, Peru. It has a bold, aromatic fruit forward flavor whilst telling the story of an ancient cacao and the people behind it.
Craft & Origin
Johnty Tatham produces Lucid chocolate in the Coastal Wairarapa region of New Zealand from a remote farm location. He employs a rigorous bean-to-bar process using ancient Chuncho cacao produced by the Puma family in Pumatiy, Cusco. Known for its small bean size and high aromatic butter content, this rare heritage cacao delivers a bold, floral fruit-forward profile that reflects centuries of selection in the Peruvian highlands. The chocolate production focuses on highlighting these complex, intrinsic characteristics through precise roasting and controlled conching processes. This technical approach yields a sophisticated bar that celebrates original vision and ancient lineage through the expressive medium of Puma family cacao known as Chuncho Especial.
Flavor & Texture
Notes of barrel-aged pinot noir, floral tobacco, sour melon. The texture is exceptionally buttery with a quick, clean melt.
How to Use
Savor this bar at room temperature to allow the chocolate to release complex aromatics.
Why We Like It
We value the preservation of this genetic profile and Tatham’s technical management of heritage cacao.
