This artisan, golden-yellow puree starts with tomatoes grown by iContadini in April and May. Hand-picked only in July and August, the vine-ripened tomatoes are cleaned, heated, pureed and then jarred with fresh basil. No salt is added. The result is a pulpy, fresh-tasting rustic tomato “passata” ready to serve in minutes. Add to any pizza or pasta recipe that calls for fresh sauce.
iContadini means "The Farmers" and that is exactly what this young company is. From the Salento region, deep in the south of Puglia, their tomatoes are cultivated, hand picked, pureed and canned within 24 hours. Open a jar and you can smell the freshness of a tomato grown in southern Italy.
