This is white chocolate in its rarest and most expressive form: a true single-origin bar made with cocoa butter that Goodnow Farms presses in-house from directly sourced Almendra Blanca cacao.

The beans are grown, fermented, and dried by farmer Vicente Caçep on his farm in Tabasco, Mexico. Distinguished by their unusually pale color and naturally nutty, creamy, and citrus-forward character, Vicente’s Almendra Blanca beans are collected each year by Goodnow Farms and transported directly to its Massachusetts workshop. Goodnow believes it is the only chocolate maker in the United States working with this particular cacao.

Most commercial white chocolate is made with cocoa butter pressed from beans of mixed or unknown origin, then deodorized to remove its natural aroma and flavor. Goodnow takes a radically different approach. By pressing its own single-origin cocoa butter and never deodorizing or alkalizing it, the maker preserves the distinctive character of the cacao rather than treating cocoa butter as a neutral fat. The result is white chocolate that genuinely tastes of its origin.
