François Doucet's Billes Gourmandes ("gourmet marbles") are an assortment of three pâtes de fruits—abricot orangés de Provence (apricot), framboise (raspberry), and myrtille (blueberry)—and jellied Provençal lavender honey in the shape of shimmering, sugar-dusted gems.

F. Doucet is renowned for its Pâtes de Fruits. The skilled team makes them in small batches, stirring fresh fruit pulp in copper cauldrons and delicately coating them in sugar. Each Pâte de Fruit bursts with the luscious flavor of ripe summer bounty or rare Provençal miel de lavande, produced just a few kilometers from the F.
