This singular bar brings together cacao from Comalcalco, Tabasco and a rare, estate-grown heirloom chile from the hills of Veracruz.
Known when fresh as Chile Nativo Tres Lomos, the chile is grown by third-generation farmer Amando Hernández at his ranch, El Palmar, in La Defensa, Yecuatla. Amando is among the few remaining stewards of this native Mexican variety, cultivating, harvesting, and smoking the chiles himself as higher-yield commercial varieties increasingly take their place.
The harvest occurs only once each year. Afterward, every chile is opened by hand and carefully stripped of its heart and seeds. It is then preserved using the traditional Meridional-Totonacapan method, a pre-Hispanic technique in which the chiles are smoked at ground level for three days over fragrant fruit woods such as guava and wild cherry.
Cuna de Piedra pairs this deeply aromatic chile with 73% dark chocolate made from cacao grown in Comalcalco. The result is complex yet beautifully restrained, with rich cacao, gentle warmth, and layers of woodsmoke and fruit that unfold slowly rather than overwhelm. A remarkable expression of Mexican agricultural heritage and traditional craft.
