Burlap & Barrel's is grown in the hot, arid northern state of Rajasthan in India on the family farm of their partner farmer, Negi. B+B loves these seeds tempered in oil or ghee with cumin and chili flakes and poured over roasted root vegetables, added to a poaching liquid for fish or crushed and rolled into a shortbread dough.

Burlap & Barrel is a single-origin spice company founded in 2016 by Ethan Frisch and Ori Zohar in New York. They source directly from smallholder farmers in over 20 countries, paying 5 to 20 times the commodity rate. Their spices are so fresh and potent that they recommend new customers use half a serving at first. "You are just cooking with old spices," says co-founder Zohar. "This is how it should be."
