The archipelago's prized pink cloves are blended with locally sourced cinnamon, cardamom, lemongrass and orange peel to create an East African homage to a beloved Indian masala. Burlap & Barrel is a single-origin spice company founded in 2016 by Ethan Frisch and Ori Zohar in New York. They source directly from smallholder farmers in over 20 countries, paying 5 to 20 times the commodity rate. Their spices are so fresh and potent that they recommend new customers use half a serving at first. "You are just cooking with old spices," says co-founder Zohar. "This is how it should be."
