The seabass is line-caught in the Cantabrian Sea during the peak season. Alalunga prepares the pesto using fresh basil, Arbequina extra virgin olive oil, and pine nuts. Each loin is hand-cut and packed manually in Cantabria to protect the delicate flakes from damage. Every tin is numbered and traceable to the specific vessel and landing date at the local port. This small-batch approach avoids chemical additives or fillers while prioritizing ingredient transparency and regional craftsmanship.
