Known for
yuzu, sudachi and kabosu citrus products

Yakami Orchard makes small-batch Japanese citrus products from yuzu, sudachi and kabosu. Yuzu is very sour and has a strongly fragrant rind, and cooks use it much as they would lemon.

Yuzu juice is the base of ponzu sauce and also goes into jams, marmalades and drinks, while kabosu stands in for lemon on fish and in soups, and green sudachi is served in thin wedges with food, especially fish.

Yakami Orchard questions

What are sudachi and kabosu?

Both are sour Japanese citrus fruits whose green fruit is used in cooking. Sudachi, much smaller than yuzu, is traditionally grown in Tokushima Prefecture, is harvested green for cooking and is often sliced into thin wedges to serve with food, especially fish. Kabosu, a little larger than yuzu, is said to have begun as a chance seedling in Ōita Prefecture on the island of Kyushu; it stands in for lemon on fish and in soups, and its most popular uses are vinegars and marmalades.

What is yuzu?

Yuzu is a sour citrus fruit that was known in ancient China and is more commonly grown in Japan, and Japan and Korea are its largest producers today. Its juice is highly acidic, averaging about 4.5 percent citric acid, and citrus researchers at the University of California, Riverside call it the most popular sour citrus used in East Asian cooking. It is used for cooking mostly while still green.
