Chinese home-style cooking and pantry sauces

Keegan Fong started Woon as a pop-up cart in Los Angeles in 2014 and left his marketing job in 2019 to open the first restaurant. The menu is built on the recipes of his mother, Julie Chen Fong, known as Mama Fong, a self-taught cook born in Shanghai who lived in Hong Kong before her family moved to Los Angeles in the 1960s. The family now also sells a line of pantry staples.

Chinese pantry sauces go into noodles, rice and sauteed vegetables, serve as a marinade for grilled meat or become the base for dressings.

Woon questions

What kind of Chinese food does Woon cook?

Woon calls its cooking homestyle Chinese, meaning family recipes cooked the way they are at home rather than restaurant banquet dishes. It draws on two regional traditions: Shanghainese, from the eastern port city of Shanghai, and Cantonese, from southern China around Guangzhou and Hong Kong. Dishes the restaurant is known for include fishcakes, pork belly and five-spice chicken wings.

How did Woon go from pop-up to restaurant?

A pop-up is a temporary food stand or event rather than a permanent restaurant. For about three years the Fong family held Woon pop-ups in a Koreatown alley in Los Angeles, and its wok-tossed noodles built a following. That led to the first Woon restaurant in Historic Filipinotown, a Los Angeles neighborhood, and later to a second location in Pasadena.
