About Wildly Virgin
- Known for
- single-estate extra virgin olive oils from independent Portuguese growers
Wildly Virgin does not own groves or mills. Co-founder Nader Akhnoukh, an olive oil sommelier who spends much of his time in Portugal, spent about a decade building a network of growers, many of them family-run, and the company bottles part of their harvest under its own label while the farms stay independent. Each bottle lists the producer, estate location, variety and harvest date.
Its producers farm in regions such as Trás-os-Montes, known for altitude and colder winters, and the range runs from smooth, fruity oils to bold, peppery ones.
Bold, early-harvest olive oils, with their peppery finish, are often saved for finishing dishes.
Wildly Virgin questions
Why does the harvest date on an olive oil bottle matter?
Olive oil does not keep its quality forever: it changes over time, especially when exposed to light, heat and air. A harvest date tells you when the olives were picked, so you know how young the oil really is. Wildly Virgin prints it on every bottle, along with the producer, estate location and olive variety, so you can pick the freshest bottle and know exactly where it came from.
What makes an olive oil taste peppery?
A peppery sting at the back of the throat in fresh olive oil comes partly from oleocanthal, a natural plant compound in the group called phenolic compounds. Robust, early-harvest oils tend to have a stronger peppery finish than milder ones. Wildly Virgin's range covers both ends, from smooth, fruity oils to bold, peppery ones.
