Helen and Leo, the founders of Superlova!, cooked in restaurant kitchens, hosted supper clubs, ran a food truck and then opened a noodle stand in Los Angeles. Helen was born in Beijing and spent her teenage years in Budapest; Leo is from San Diego. Dan Dan noodles were the stand's signature, and when the pandemic closed it, they bottled the flavors.

They split the recipe into separate sauces because sesame paste and liquid soy sauce do not age well together in one jar. The sauces range in heat, with milder ones made for families and gentler palates. The company makes its sauces without seed oils.

Sesame noodle sauces are tossed with hot noodles and finished with scallions, and they also work on rice, dumplings, eggs and vegetables.

What are dan dan noodles?

Dan dan noodles are a street dish from Chengdu, in China's Sichuan province. The name means carrying pole noodles, after the poles vendors carried over their shoulders with noodles and sauce in baskets at each end. The traditional sauce mixes chili oil, pickled mustard stems and minced pork. Superlova's founders made a sesame-rich version the signature of their Los Angeles noodle stand.

What is Chinese sesame paste?

Chinese sesame paste is ground from roasted sesame seeds. It is much darker than most Middle Eastern tahini and less astringent, meaning it has less of a dry, puckering edge. Sichuan cooks use it in some recipes for dan dan noodles, and sesame is the base Superlova builds its sauces on.
