About Shaquanda's
- Based in
- Brooklyn, New York
- Known for
- Barbadian-style scotch bonnet hot sauces
Andre Springer was born in Bedford-Stuyvesant, Brooklyn, of Barbadian descent, and as a kid he pickled peppers with his grandmother, a former cook in Barbados, blending them into homemade sauces. Years later, performing in drag as Shaquanda, he added hot sauce to the act in 2014, dancing with audience members and serving them sauce on the spot. People kept asking to buy it, and the sauce line grew out of those requests.
The original sauce is his take on classic Barbadian hot sauce; later ones remix it or head in new directions, including a smoky remix influenced by Andre's friends from the South. The original sauce is made with turmeric, mustard, onion, scotch bonnet peppers and apple cider vinegar.
Beyond the table, the sauces work as cooking sauces and marinades.
Shaquanda's questions
What is Barbadian pepper sauce?
Bajan means from Barbados, so Bajan pepper sauce is the pepper sauce of that Caribbean island. Andre Springer's first sauce was his own take on classic Barbadian hot sauce, and later sauces remix it or head in new directions, such as a smoky version influenced by friends from the South. The original sauce is made with turmeric, mustard, onion, scotch bonnet peppers and apple cider vinegar.
How hot are scotch bonnet peppers?
Very hot. Chili heat is measured in Scoville heat units, which reflect how much capsaicin, the compound behind a chili's burn, a pepper holds, and scotch bonnets rate about 100,000 to 350,000, roughly 12 to 140 times hotter than a jalapeño. They also taste of sweet tropical fruit, and they are the backbone of many Caribbean pepper sauces, including the classic Barbadian style that Andre Springer's first sauce is based on.
