Riso Carena questions
What makes risotto creamy?
Risotto uses short or medium grain rice high in starch, such as Arborio or Carnaroli, and the rice is not rinsed. The grains are toasted in butter or oil, then hot broth goes in a little at a time while you stir, and the rubbing grains release starch that thickens the liquid. Off the heat, beat in cold butter and grated Parmesan, a step Italians call mantecatura. Done well, risotto is creamy with no cream at all.
What is risotto alla milanese?
It is the saffron risotto of Milan, and the saffron is what turns the rice its signature yellow. The earliest recipes, from the early 1800s, cooked the rice in butter with beef marrow and added saffron broth a little at a time. Milan sits in Lombardy, the same northern Italian region as Pavia, where Riso Carena grows out of a rice-growing tradition.
