small-batch bean-to-bar chocolate from Reykjavík

Chef Kjartan Gíslason and his childhood friend Óskar Þórðarson founded Omnom in 2013, setting up their first production lab inside a converted gas station in Reykjavík. They make chocolate in small batches, starting from the cacao bean rather than from bought-in chocolate.

Omnom buys single-origin cacao from Madagascar, Tanzania and Nicaragua through direct trade, its cacao beans are organic, and its milk chocolate is made with Icelandic milk powder. The bars are designed and made in Iceland.

Omnom questions

What does bean-to-bar mean on Omnom chocolate?

It means Omnom starts with raw cacao beans and makes the chocolate itself in Reykjavík, instead of melting down chocolate bought from another maker. Co-founder Kjartan Gíslason began by making chocolate from scratch, and the company still works in small batches.

Where does Omnom get its cacao?

Omnom buys single-origin cacao, meaning beans from one named place rather than a blend of origins, from Madagascar, Tanzania and Nicaragua, and the beans are organic. The cacao percentage on a wrapper only tells you how much of the bar comes from the bean, not which beans. Omnom's milk chocolate is made with Icelandic milk powder.
