Aaron Trotman founded NON in Melbourne in 2019. Nothing is stripped out of a finished wine. A team of food and drink professionals builds each bottle from zero in a purpose-built facility, borrowing techniques from winemaking, perfumery and gastronomy to create fruit, tannin, salt and acid.
Each bottle is built to drink like a wine without being one, with the dry grip of tannin, a touch of salt and bright acid.
