Charlotte Langley has spent more than 25 years in professional kitchens. She grew up on Prince Edward Island, where seafood was part of daily life, and trained as a classical chef after stumbling into culinary school. Before Nice Cans she ran a busy 30-seat seafood restaurant in Ottawa, and the brand grew out of a plain question: why not build something around what she knows best, seafood.
The sardines are MSC certified and hand-packed in Portugal, and Langley keeps close working relationships with her co-packers.
The bold pink lettering on the tins is deliberate. The graphic design makes them easy to hand over as a gift.

What does MSC certified mean on Nice Cans sardines?
MSC stands for the Marine Stewardship Council, which sets a standard for sustainable wild fishing. To earn its blue label, a fishery has to show that its fish stocks stay healthy, that its impact on the ocean is kept low and that it is well managed, and independent auditors check it every year. Every company that handles the fish afterward is audited too, so a tin carrying the label can be traced back to that certified fishery.
Do tinned sardines need cooking?
No. Tinned sardines are fully cooked in the can, and Charlotte Langley warns that long, high heat turns them mushy. Eat them straight from the tin on crusty bread with a squeeze of lemon and a pinch of sea salt, spooning some of the oil over so the bread soaks it up. For pasta or rice, stir them in just before serving; the soft bones are edible.
