What are cocktail bitters?

Bitters are alcohol flavored by steeping botanicals such as herbs, bark, roots and fruit peel, which gives a strongly bitter or bittersweet taste. Bartenders add them by the dash or drop. Many cocktails are already sweet and sour, and a few dashes of bitters add a contrasting flavor that makes the drink more balanced and complex. Mister Bitters peels, infuses, presses, blends and bottles its bitters by hand.

What is a Negroni, and where do bitters fit in?
