About Mirzam
- Based in
- Dubai, United Arab Emirates
- Known for
- bean-to-bar chocolate inspired by the spice routes
Mirzam makes chocolate from the bean at its factory in Al Quoz, Dubai, handling roasting, grinding and shaping under one roof. The company takes its theme from the ancient spice routes and buys cacao from farms along them.
Its origins include the Bejofo Estate in Madagascar's Sambirano Valley, Kokoa Kamili in Tanzania's Kilombero Valley, Ransiki in West Papua and plantations in India and Vietnam. Spices such as cinnamon, green cardamom and black pepper come from the same routes.
Many of its bars pair the chocolate with fruit and spices. Its flavored bars draw on ingredients such as cardamom, rose, dates, orange and Kashmiri chili.
Mirzam questions
What were the spice routes?
The spice routes were the old trade networks that carried spices from India, Sri Lanka and the Spice Islands to the Middle East and Europe, partly over land but mainly by sea. Spices such as cinnamon, cardamom and black pepper moved along them. Mirzam, a chocolate maker in Dubai, takes the routes as its theme, buying cacao and spices from places along them.
What does bean-to-bar mean?
A bean-to-bar maker starts from whole cacao beans and controls the whole process, rather than melting down chocolate made by someone else. That means the maker, not a bulk supplier, decides which farms to buy from and how the beans are roasted and ground. Mirzam does all of this at its own factory in Dubai.
