Mayana questions

How does Mayana build its candy bars?

Mayana's candy bars combine chocolate with fillings such as caramel, marshmallow, peanut butter and vanilla cookies, and some, like the PB&J bar, are built in layers. Several set sweet against salty with salted caramel or crunchy potato chips, and some are made in small batches.

What is the difference between milk, dark and white chocolate?

US rules define chocolate by what goes into it. Milk chocolate must contain at least 10 percent chocolate liquor, the paste of finely ground cacao nibs, plus at least 12 percent milk solids, while semisweet and bittersweet chocolate need at least 35 percent chocolate liquor. White chocolate is built on cocoa butter, the bean's fat, at no less than 20 percent, with milk and sugar. Mayana makes several of its bars with dark chocolate.
