Matiz questions

What is paella, and why does the rice matter?

Paella is a rice dish rooted in the area around Valencia, near the Albufera lagoon, where farm workers cooked rice with whatever they had on hand over a wood fire. It takes its name from the wide, shallow pan it is cooked in. The ideal rice is a stubby, medium-grain kind that absorbs liquid but stays firm, and the crusty golden layer that forms on the bottom is called socarrat.

What does conserva mean?

Conserva is Spanish for food such as meat, fish or fruit that has been prepared and sealed airtight so it keeps for a long time, and the word also covers vegetables such as peppers kept in vinegar. The Matiz España line includes tinned fish and shellfish, along with olive oil, vinegar, vegetables and grains.
