The Jeannequin family grows cornichons in Chemilly-sur-Yonne, and in 2012 Florent Jeannequin and his son Henri created their own brand, Maison Marc, named for Florent's father. Most cornichons sold in France are now grown abroad, mainly in India, and Maison Marc is one of the very few French growers left.

The cucumbers are grown without herbicides or pesticides. Pickers reach under each plant for the fruit and do all the picking by hand, and the family jars the cornichons itself.

What is a cornichon?

A cornichon is a tart French pickle made from a gherkin, a small, often bumpy cucumber grown for pickling, usually preserved in vinegar with tarragon. In France cornichons are the classic partner for pâté and cold cuts. Maison Marc grows its own in Burgundy and picks them by hand.

What does malossol mean?

Malossol is Russian for lightly salted. Pickles made this way use less salt, and in Eastern Europe the name goes with cucumbers pickled for only a few days, which taste less sour than fully pickled ones. Maison Marc, the Burgundy family known for classic French cornichons, also makes cornichons in this lighter style.
