Loison has made Italian pastry in Costabissara, in the province of Vicenza in the Veneto, since 1938, and the family is now in its third generation at the business. The company is best known for panettone, colomba and veneziana, the large holiday breads of northern Italy.

What does biscotti mean in Italian?

In Italian, biscotti simply means cookies of any kind. In English the word usually means cantucci, the hard, twice-baked almond biscuits made for dunking in coffee or sweet wine. So an Italian bakery's biscotti can just as easily be soft butter cookies, which is the style Loison bakes to traditional recipes.

What is panettone?

Panettone is a tall, dome-shaped sweet bread from Milan, eaten across Italy at Christmas. The dough is rich with butter and egg yolks and rises slowly over many hours, which gives it a light, stringy crumb, and it is usually studded with raisins and candied citrus peel. Colomba is the dove-shaped Easter cousin of the same dough, and veneziana is a version topped with almond glaze or sugar.
