The Leitz family's winegrowing tradition in the Rheingau goes back to 1744. Johannes Leitz took over the estate in Rüdesheim am Rhein in 1985, and its wines include single-vineyard Rieslings from the Rüdesheimer Berg above the Rhine.

The estate also makes alcohol-removed wines under the Eins Zwei Zero name. They start as finished wines, based on the estate's Eins Zwei Dry range, and the alcohol is taken out afterward.

How does Leitz remove the alcohol from its wines?

Alcohol boils at about 78°C (172°F), and heating wine that hot at normal air pressure would also drive off the compounds that give it aroma and taste. Leitz starts with a finished wine and puts it in a vacuum evaporator, where the low pressure lets the alcohol evaporate at only about 27°C (81°F). The gentler heat keeps more of the wine's aromas in the glass.

What is the difference between non-alcoholic and alcohol-free wine?

The two terms are not the same. US rules use 0.5 percent alcohol by volume as the line for calling a drink non-alcoholic, while the term alcohol-free may only be used when no alcohol can be detected at all. Alcohol-removed wines can keep a small trace, so anyone who must avoid alcohol entirely should check the label.
