About Gueyu Mar

Based in
Playa de Vega, Ribadesella, Asturias, Spain
Founded
2007 (restaurant); 2017 (conservas)
Known for
seafood grilled over wood embers, then canned

Güeyu Mar opened in 2007 on Playa de Vega, a beach near Ribadesella on the Asturian coast of northern Spain. Luisa Cajigal and Abel Álvarez built it around fish and shellfish from the Cantabrian Sea cooked over embers.

In 2017 the couple began canning what comes off their grill. The seafood is cooked over embers of birch, beech and oak before it goes into the tin, and each tin is wrapped by hand in kraft paper that can double as a tablecloth. The first tins held grilled sardine loins and tails.

Gueyu Mar questions

What are conservas?

Conservas is the Spanish word for foods such as meat, fish or fruit that are prepared and sealed airtight so they keep for a long time. Spain leads the European Union in canned seafood production, according to the Food and Agriculture Organization of the United Nations. Güeyu Mar's tins come from Asturias, on Spain's northern coast.

Is Güeyu Mar seafood cooked before it is tinned?

Yes. Güeyu Mar grills its seafood over embers of birch, beech and oak, the way its restaurant on Playa de Vega cooks, so the fish goes into the tin already cooked over the fire.
