Single-origin means all the cacao in a bar comes from one place, which can be as broad as a country or as narrow as one farm. As with grapes for wine, cacao reflects where it grows, so a single-origin bar lets you taste that place instead of a blend. Labels that name a specific estate or grower tell you more than ones that name only a country.

Who is Bryan Graham, the founder of Fruition?

Bryan Graham learned to bake from his grandmother, a skilled baker, on her farm in upstate New York. At 16 he apprenticed, training on the job, at Bear Café in Woodstock, New York, and at 18 became its assistant baker and pastry chef. He then trained at the Culinary Institute of America and did an externship, a short work placement during school, at Jacques Torres Chocolates in New York City. A small bean-to-bar batch he made with Chef Peter Greweling turned his interest to chocolate.
