Divina is the brand of FOODMatch, a New York company launched in 1996 that produces and imports Mediterranean specialty foods, with olives and antipasti at the center. FOODMatch buys whole crops of olives and other staples directly from growers, an approach it calls grove to table.

The Divina range is built on olives and antipasti. Olives and pickled vegetables are classic set out with cold meats, pâté or smoked fish, and olive spreads go on toasted bread, pasta or grilled fish.

What are antipasti?

An antipasto, plural antipasti, is the traditional first course of a formal Italian meal. A typical spread mixes cured meats and cheeses with olives and vegetables pickled in vinegar, such as peppers, fennel or eggplant. Olives and antipasti are at the center of what Divina's parent company, FOODMatch, produces and imports.

Why are olives cured?

Olives straight from the tree are very bitter and astringent, meaning they make the mouth pucker, mainly because of a natural compound called oleuropein. Curing draws out that bitterness: soaking in lye takes a few days, while soaking in brine (salty water) or packing in dry salt takes a few months. Olives from growers around the Mediterranean are the core of Divina's range.
