Dale DeGroff was the original chief bartender at the Rainbow Room in Rockefeller Center from 1987 to 1999 and wrote The Craft of the Cocktail (2002). In 2012 he released a cocktail bitters built on allspice.

The bitters are made at the Combier distillery in Saumur, France, where a blend of whole botanicals is infused and then distilled, with no commercial flavorings or artificial dyes.

Bartenders add aromatic bitters by the dash to tiki drinks, to whiskey drinks such as the Sazerac, and to a glass of sparkling wine.

Where are Dale DeGroff's bitters made?

They are made at Distillerie Combier in Saumur, a town about 200 miles southwest of Paris. Jean-Baptiste Combier and his wife started the business as a confectionery in 1834, and the distillery was built in 1848. Combier says its orange liqueur, first made from sun-dried orange peel, was the world's first triple sec, a style of orange liqueur.

What are bitters, and what is pimento?

Bitters are a concentrated, alcohol-based flavoring made from herbs and spices, added to drinks by the dash. Pimento is another name for allspice, the dried unripe berry of the Pimenta dioica tree, named in the 1600s because its flavor seemed to combine cinnamon, nutmeg and clove in one spice. DeGroff made allspice the base of his bitters.
