Why is Calahorra known for preserves?

Calahorra sits on irrigated farmland between the Ebro and Cidacos rivers in La Rioja, and its tomatoes and peppers were famous as far back as the 1700s. The town was an early center of Spanish canning: of 64 canning companies counted in 1890, 38 were in Calahorra. Conservas Serrano still packs its vegetables, fruit and jams there.
