China Live questions

What is chili crisp?

Chili crisp is a Chinese condiment of oil packed with crunchy bits of chili pepper, often with garlic, onion or scallion, made in regional versions by households and restaurants for generations. It is a finishing condiment: spoon it over or stir it into food just before serving, on eggs, noodles, soups or even ice cream. China Live makes its own chili crisp in its San Francisco kitchens.

What is chili bean sauce?

Chili bean sauce is another name for doubanjiang, a hot, savory Chinese paste of fermented broad (fava) beans, chili peppers, soybeans, salt and flour. Fermenting means aging the ingredients so microbes deepen the flavor; the best-known kind, from Pixian near Chengdu, often ages for more than three years. It is a key ingredient in Sichuan dishes such as mapo tofu, and China Live makes a chili bean sauce in house.
