About Central BBQ

Based in
Memphis, Tennessee
Founded
2002
Known for
Memphis-style smoked barbecue and dry rubs

Craig Blondis and Roger Sapp met on the barbecue competition circuit in the mid-1980s. They cooked at Memphis in May's World Championship Barbecue Cooking Contest and at plenty of local and regional contests before going into business together. In 2002 they fired up the pit at the first Central BBQ, on Central Avenue in Memphis, and the business has since opened more restaurants in Memphis and beyond, including Nashville.

The method is Memphis style. Meat gets a house blend of dry-rub spices, marinates for 24 hours and is slow-smoked over hickory and pecan. No sauce goes in the pit.

Central BBQ sums up its approach in four words on its own website: smoke is our sauce.

Central BBQ questions

What is Memphis-style barbecue?

Central BBQ, which has served Memphis-style barbecue since 2002, seasons its meat with a house blend of dry-rub spices, marinates it for 24 hours and slow-smokes it over hickory and pecan, with no sauce in the pit. Its ribs are served dry, with the rub alone, wet, with sauce, or half and half.

What wood does Central BBQ smoke with?

Hickory and pecan. Central BBQ slow-smokes its meat over both woods after seasoning it with a dry rub, a mix of ground spices, and marinating it for 24 hours. No sauce goes on the meat in the pit, the smoker where it cooks, and the company's motto is "Smoke is our sauce."
