About Boudet
- Based in
- France
- Known for
- French fruit preserves
Boudet is a French maker of fruit preserves. Its approach starts with the fruit: rather than buying fruit by type alone, it selects particular varieties, chosen for their flavor and, in some cases, for the region where they grow.
Preserves are fruit cooked with sugar until it sets into a spoonable spread. Spread the preserves on toast or a croissant, stir them into yogurt, or use them to fill Linzer cookies or a sponge cake.
Boudet questions
What is a fruit variety, and why does Boudet choose by it?
A variety is a distinct type within one kind of fruit, and varieties differ in flavor, sweetness, sharpness and texture. Apples show it best: a tart green apple and a sweet red one are the same fruit but different varieties. Apricots and raspberries vary the same way. That is why Boudet picks its fruit by variety, and sometimes by growing region, rather than buying a fruit by type alone.
Why is pectin used in fruit preserves?
Pectin is a natural substance in the cell walls of fruit, and it is what makes jam set. Some fruits contain plenty of it, but soft fruits contain little, so preserve makers, Boudet among them, add a small amount to give the preserve its spoonable body.
