The restaurant opened on Aspen Mountain in 1966 as Gretl's, built by German ski racer Gretl Uhl and her husband, Sepp. In 1980 Uhl handed it to her friend Bonnie Rayburn, and it has carried Bonnie's name since. Skiers know it for apple strudel, white bean chili and pancakes with oatmeal stirred into the batter.

Pancake mix is sold under the Bonnie's name out of Aspen, Colorado, built on the same oatmeal base as the restaurant.
