About Bittercube

Based in
Milwaukee, Wisconsin
Founded
2009
Known for
small-batch cocktail bitters made with real botanicals

The first Bittercube batches were made by hand in one-gallon glass jars in 2009. Ira Koplowitz and Nick Kosevich were working bartenders with no business background, and they built the company around the bitters they wanted for their own drinks.

Production is still in Milwaukee, Wisconsin. The team buys organic botanicals whenever possible, sources as close to origin as it can, and takes several weeks to make each batch. The range runs to nine varieties.

Use them in stirred and shaken drinks alike, such as an Old Fashioned. Start with two dashes and adjust to taste.

Bittercube questions

What are cocktail bitters, the thing Bittercube makes?

Bitters are concentrated flavorings made by soaking bark, roots, peel, herbs and spices in strong alcohol, then added to drinks by the drop or dash rather than poured. They work like seasoning, and have been called the salt and pepper of the cocktail world, because a dash or two balances a drink's sweetness. The two most common styles are aromatic bitters, with warm spices such as clove and cinnamon, and orange bitters, with citrus.

Why does a batch of Bittercube bitters take weeks to make?

Bitters are made by soaking botanicals, the actual barks, roots, peels and spices, in alcohol so it slowly draws out their flavor and bitterness. Bittercube gives each batch several weeks for this and works with real botanicals, not flavorings. The result is so concentrated that a dash or two seasons a whole drink.
