Bee Squared Apiaries is a small beekeeping operation in Berthoud, Colorado, and beekeeper Beth Conrey is its former owner. She took a beekeeping class after reading newspaper columns by her friend Tom Theobald and started with two hives. Conrey was also a founding board member of the People and Pollinators Action Network.

Its barrel-aged honey comes from work with Colorado distilleries. Raw alfalfa honey goes into used whiskey barrels, and Spirit Hound Distillers in Lyons has taken barrels back to finish its own whiskey.

Bee Squared Apiaries questions

What is alfalfa honey?

Honey takes its color and flavor from the flowers the bees visit, and honey made mostly from one plant is called monofloral. Alfalfa honey comes from the blossoms of alfalfa, a crop grown for hay. It is white or extra light amber, with a mild flavor and an aroma like beeswax, so it does not overpower other flavors.

What is the People and Pollinators Action Network?

It is a Colorado nonprofit that works to protect pollinators such as bees, which carry pollen between flowers so plants can set seed and fruit. Beth Conrey, former owner of Bee Squared Apiaries, was a founding board member. The group educates and advocates for eliminating unnecessary pesticides in urban, working and wildland areas, and works to restore and create native plant habitat.
