An acetaia is a vinegar house, and the Malpighi family has run one in Modena since 1850. Today the family looks after more than 3,500 barrels of Traditional Balsamic Vinegar of Modena, the long-aged DOP vinegar, alongside balsamic vinegar of Modena IGP and a line of condiments and dressings.
The barrels are made from several woods, including oak, chestnut, cherry, juniper, mulberry and acacia, and some date to the sixteenth century. The family also opens the acetaia for guided tours that end with a tasting of several balsamics. Most of what they make leaves Italy: over 70 percent of production is exported.

What is the difference between DOP and IGP balsamic vinegar?
DOP and IGP are European labels that protect how and where a food is made. Traditional Balsamic Vinegar of Modena DOP is made only from cooked grape must (boiled-down fresh grape juice) and aged at least 12 years in a series of wooden barrels, so it is thick, sweet and used by the drop. Balsamic Vinegar of Modena IGP blends grape must with wine vinegar and ages as little as 60 days, which makes it thinner and sharper, better for everyday dressings.
What is a balsamic condiment?
A balsamic condiment, or condimento, is a balsamic-style product sold outside the two official labels. The DOP and IGP rules fix strict recipes and aging times, but there is no official standard for condiments, so each acetaia (vinegar house) sets its own recipe. Malpighi makes condiments and dressings alongside its DOP and IGP vinegars, and the maker's label is the best guide to what is inside.
