Why Chocolate Turns White, Whether It Is Still Good, and How to Store It So It Never Happens
A bar of good chocolate left in a warm car or forgotten through a summer comes out of its wrapper streaked white, dull gray, or dusted like a frosted window, and the usual reaction is to throw it away. Do not. What you are looking at is bloom, and bloom is the chocolate's own cocoa butter or sugar moving to the surface, not mold and not spoilage. It is safe, it is fixable for some uses, and it is entirely preventable with storage that costs nothing. The two kinds of bloom
Fat bloom is the common one. Cocoa butter, the fat in chocolate, can solidify in six different crystal forms, and only one of them, the one tempering produces, gives a bar its gloss, its snap and its melt-in-the-mouth quality. When chocolate gets warm, above about 75 to 80°F, some of that cocoa butter melts, and as it cools again without being tempered, it recrystallizes in looser forms and migrates to the surface as pale streaks and blotches. The bar goes dull, feels waxy or crumbly, and melts less cleanly. It tastes slightly flatter but it is the same chocolate.
Sugar bloom is rarer and comes from moisture. If chocolate is exposed to humidity, or moved from a cold refrigerator into warm air so condensation forms on it, the surface sugar dissolves in that water; when the water evaporates, the sugar recrystallizes as a fine, dry, gritty white dust. It feels rough rather than waxy and does not melt when you touch it.

Is bloomed chocolate safe to eat?
Yes. Both kinds of bloom are cosmetic. The chocolate has not gone off, grown anything or become unsafe; it has rearranged. Eaten as it is, a fat-bloomed bar tastes slightly less bright and melts less smoothly, and the texture can be chalky, but there is no risk. Mold on chocolate is very rare because chocolate has so little water, and when it does happen, on a filled chocolate with a wet center, it is fuzzy, green or black, and smells musty; bloom is smooth, pale and smells like chocolate.
Can you bake with it?
Yes, and this is the best use for a bloomed bar. Melting resets everything: once the chocolate is liquid in a brownie batter, a ganache, a sauce or a cup of drinking chocolate, the crystal structure that bloomed is gone and the flavor is intact. The one thing bloomed chocolate is not good for is any use where it needs to set hard and glossy again, dipping, coating, molding, unless you re-temper it, which is the process in the bean-to-bar piece and is entirely doable at home with a thermometer and patience.
How to store chocolate
Chocolate wants four things: cool, dry, dark, and away from smells. The ideal is 60 to 68°F at low humidity, in its wrapper, in a sealed container or tin, in a cupboard that does not sit above the stove or beside a window. That describes most pantries in most seasons, and it is why a well-stored bar keeps for a year or more. Chocolate absorbs odors readily through its fat, so it should not live beside the coffee, the spices, the onions or a bar of soap; a tin solves this. In summer, or in a hot kitchen, the question becomes the refrigerator.
Should chocolate go in the refrigerator?
Ideally no, and if it must, then carefully. The refrigerator is humid and full of smells, and the real danger is the trip out: cold chocolate meeting warm air sweats, and that condensation is exactly what causes sugar bloom. If your kitchen is above 75°F for weeks and there is no cooler cupboard, wrap the chocolate airtight, in its wrapper and then a sealed bag or container, put it in the refrigerator, and when you take it out, leave it sealed until it has come fully to room temperature, an hour or two, before opening. That keeps the condensation on the outside of the bag. The freezer works the same way for long storage, with a stop in the refrigerator on the way out to reduce the temperature shock. Neither is as good as a cool cupboard, but both beat a bloomed bar.
How long does chocolate keep?

These are industry rules of thumb, and a well-made bar in cool, dark storage will beat them. Old chocolate does not become unsafe; it becomes dull. The signs are a faded aroma when you open the wrapper, a soft rather than sharp snap, and a flat, slightly stale flavor. Why craft bars bloom faster than candy bars
A two-ingredient craft bar is cacao and sugar, tempered by hand or in a small machine, with nothing added to stabilize it. Mass-market chocolate often contains emulsifiers and, outside the strictest markets, vegetable fats that resist bloom, which is why a candy bar survives a glovebox better than a fine one. That is not a point in the candy bar's favor. It is the difference between a bar built to be eaten within a year of the harvest and a bar built to survive a warehouse, and it is why the storage rules above matter more the better the chocolate is.
Short answers to the rest
Can you re-temper bloomed chocolate at home? Yes: melt it to 115°F, cool it to 82°F while stirring with a few pieces of well-tempered chocolate as seed, warm it to 88 to 90°F, and set it in a cool room. Does bloom mean the shop stored it badly? Sometimes; more often it means the delivery van or the summer kitchen. Does dark chocolate with a white film taste bad? Slightly flatter; try it before deciding.
